"Trail Mix" Baked Oatmeal

Dried fruits, nuts & seeds, oatmeal and a few more ingredients all baked into one dish. This recipe promises an easy breakfast that you can make ahead of time. This "trail mix" inspired oatmeal is packed with flavor, protein and fibers, and can be garnish with your favourite toppings.

"Trail Mix" Baked Oatmeal

Baked oatmeal are one of my favorite wintertime breakfasts. It's feeding, healthy and full of good things. I love "trail mix", it's filled with nuts, dried fruits and sometimes dark chocolate chips. I had the idea to combine all these delicious things by creating this oatmeal. It's the best of both worlds, oatmeal and "trail mix", yummy!

Ingredients (6 Servings)

2 cups Oatmeal (not quick oats)
¼ cup Brown sugar
3 tbsp Vegan Pro - Maple Vanilla
1 tsp Baking powder
1 tsp Ground cinnamon
⅓ cup Dark chocolate chips
¼ cup Unsalted peanuts
¼ cup Unsalted sunflower seeds
¼ cup Dried cranberries
¼ cup Raisins
1 cup Plant-based milk
2 tbsp Vegan margarine, melted
1 tsp Vanilla extract

Method

1. Start by preheating your oven to 350°F (180°C) and line an 8x8 inch (20x20 cm) pan with parchment paper. Reserve.

2. In a large bowl, add all the ingredients together in the order listed. Mix.

3. Pour into the prepared mould. Bake in the preheated oven for 35 minutes.

4. Let cool completely before cutting into 6 parts.

Topping: Top each part with plant-based yogurt or natural peanut butter, if desired.
