Vegan Blueberry Cookies
I wanted to create a recipe with blueberries. Not only is it one of my favourite fruits, but it is also a seasonal fruit! I wanted to do something different from the classic crumble (a delicious dessert), so I thought of cookies.
I can guarantee you that they are in the top 3 of my best cookie recipes! I am very proud of this recipe, and I am convinced that coconut sugar has something to do with it.
Ingredients (11 cookies)
1 cup Unbleached all-purpose flour
1 tbsp Organic Ground Flaxseeds
1/2 tsp Baking soda
Pinch of salt
1/3 cup Vegetable margarine, melted
1/2 cup Pure Organic Coconut Sugar
2 tbsp Plant-based milk
1 tbsp Lemon juice
1 tsp Vanilla extract
1/2 cup Fresh blueberries
Method :
1. In a small bowl, combine flour, flaxseeds, baking soda and salt. Reserve.
2. In a large bowl, combine the margarine, sugar, plant-based milk, lemon juice and vanilla extract with a whisk. Gradually add the dry ingredients and mix. Add the blueberries and, using a spatula, mix gently.
3. Put the dough ball in a bowl, cover and refrigerate for 1 hour.
4. Preheat the oven to 350°F and lightly oil a baking sheet. With the dough, form 11 cookies. Bake for 12 to 15 minutes in the oven.
