Vegan Dark Chocolate Pudding

The chocolate pudding of your dreams, completely vegan with good-for-you ingredients! Maple-sweetened and free of gluten, dairy, eggs, refined sugar, and nuts... A pure delight!

Ingredients (6 small servings)

1 cup Unsweetened almond milk
1/4 cup Filtered water
1 cup Pure Organic Cacao
1/2 cup Well-stirred unsweetened sunflower butter (or any creamy seed or nut butter)
1/4 cup Maple syrup (or more, to taste)
1 tsp Vanilla extract
1 pinch Sea salt
3 tbsp Melted coconut oil

Toppings (optional)
Vegan whipped cream (coconut-based)
Dark chocolate shavings or cacao nibs

Method

1. Combine the unsweetened almond milk, filtered water, cacao powder, unsweetened sunflower butter, maple syrup, vanilla extract, and salt in a blender.

2. Blend on medium speed until well combined, scraping down the sides of the blender once or twice.

3. Add the melted coconut oil and blend until combined. The pudding can be very runny at this point (depending on the seed/nut butter you use), but it will firm up as it chills.

4. Pour the pudding into individual cups or jars. Chill until firm, at least 30-60 minutes (or more, depending on the seed/nut butter you use).

5. Serve with toppings of choice, if desired.
