Vegan Double Chocolate Muffins

Absolutely decadent, this double chocolate muffins recipe will satisfy your sweet tooth: quality ingredients, an ultra-soft texture, a simple, quick and delicious recipe.

Serves 12 muffins

Ingredients (12 muffins)
Wet:
1 Vegan egg (1 tbsp Organic Ground Flaxseeds and 2 1/2 tbsp water)
1 Ripe banana
1/3 cup Maple syrup
3/4 cup Plant-based milk of choice
1 tsp Vanilla extract

Dry:
1 cup Unbleached all-purpose flour
1/2 cup Pure Organic Cacao
1 tsp Baking soda
2 tsp Baking powder
1/2 tsp Salt

1/4 cup + 1 tbsp Dark chocolate chips

 

Method

1. Preheat the oven to 400°F and line a muffin tin with paper liners.

2. Prepare the vegan egg by mixing the ground flaxseed and water. Set aside.

3. In a large bowl, mix all dry ingredients. Set aside.

4. In a medium bowl, mash the banana first, then add the vegan egg, maple syrup, plant-based milk, vanilla extract, and mix. Add this mixture to the dry ingredients mixture and mix until well combined.

5. Add 1/4 cup dark chocolate chips and mix again.

6. Divide the mixture among the paper liners. Then, add the remaining 1 tbsp dark chocolate chips on top of the muffins.

7. Bake for 20-25 minutes or until a toothpick comes out clean.
