Vegan Nutritious Coffee and Chocolate Muffins

I am now the mother of a two-month-old baby girl, so I have to find simple, healthy and nutritious snacks to survive my big days and, especially, breastfeeding! These muffins are perfect for that.

I am a big lover of coffee and chocolate. These muffins fall right into my tastes! They are deliciously moist and flavorful.

 

Ingredients (9 muffins)

Dry
1 cup Unbleached all-purpose flour
1/2 cup Whole wheat flour
1 tsp Baking powder
1 tbsp Baking soda
Pinch of salt

Liquids
1 tbsp Organic Ground Flaxseeds + 2 tbsp water
1/2 cup Unsweetened applesauce
1/2 cup Vanilla plant-based milk
1/4 cup Cold strong coffee 
1/4 cup Canola oil
1/4 cup Maple syrup
2 tbsp Brown sugar
1 tsp Vanilla extract
1/2 cup Dark chocolate chips



Method : 

1. Preheat the oven to 350°F. Place 9 paper cases in a muffin tin.

2. In a small bowl, combine ground flax seeds and water. Let stand 5 minutes.

3. Meanwhile, mix all the dry ingredients. Set aside.

4. Combine the flax with the remaining liquid ingredients in a large bowl.

5. Add the dry ingredients to the liquid preparation while stirring. Add the chocolate chips and mix until it's homogeneous.

6. Divide the batter into the 9 moulds. Bake for 25 to 30 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let cool completely on a wire rack.
