Vegan Protein Date Squares

Vegan Protein Date Squares

Your favorite date dessert, but with a nutritious twist! 

Ingredients (16 squares)
Dry ingredients

2 cups Quick cooking rolled oats
1/2 cup Vegan Pro Maple Vanilla
1/3 cup Pure Organic Coconut Sugar

Wet ingredients

1/3 cup Melted butter
1/3 cup Almond butter
2 tbsp Plant-based milk

Date mix ingredients

2 cups Pitted dates
1 cup Water


Method : 

1. Preheat the oven to 400°F.

2. In a skillet, place the dates and water over medium heat. Heat the dates until they become soft.

3. When they are soft, puree them using a hand blender or a food processor to obtain a smooth puree.

4. In a bowl, combine all the dry ingredients.

5. In a second bowl, combine the wet ingredients.

6. Add the dry ingredients to the mixed wet ones.

7. Butter an 8-inch square baking bowl.

8. Pour 2/3 of the oat mixture into the bottom of a cooking bowl and press down firmly. Add the date mixture, spreading it evenly. Add the remaining oat mixture and press lightly.

9. Place in the oven for 25 to 30 minutes.

10. Let cool completely. Cut into 16 pieces.
