Vegan Rhubarb Berry Bread

The sun is shining in the sky, the days getting longer… It’s the perfect timing for our vegan rhubarb berry bread — easy to make, fresh, healthy and delicious. You’ll love it for breakfast on the balcony, as a snack during picnics with friends and on a hike.

Cooking time: 50-60 minutes

Ingredients (8 servings)

1 1/2 cup All-purpose flour
1 scoop Vegan Pro - Very Berry
1/2 tsp Baking powder
1/4 tsp Salt (we used Fleur de sel)
1/4 tsp Ground nutmeg
1 Ripe banana
1/2 cup Oat milk
1/4 cup Maple syrup
3 tbsp Unrefined canola oil, first cold-pressed and raw, or any other oil of choice
1 cup Fresh berries of choice (we used strawberries), diced
1 cup Fresh rhubarb, diced

Method

1. Preheat the oven to 350°F. Oil a 5x9-inch (13x23 cm) loaf pan and set aside.

2. In a large bowl, mix the flour, vegan protein, baking soda, salt and nutmeg together. Set aside.

3. In another large bowl, mash the banana with a fork, then add the oat milk, maple syrup and oil. Mix well.

4. Pour the dry ingredient mixture into the wet ingredient mixture. Mix well until you obtain a firm and homogeneous batter.

5. Stir the berries and rhubarb into the batter. Combine well and pour into the oiled loaf pan.

6. Bake for 50-60 minutes or until a toothpick inserted in the center of the bread comes out clean.

7. Cool for 10-15 minutes, then remove from the pan and allow to cool completely.
