Vegan Rice Krispie Squares

A childhood classic, but make it vegan! We have risen to the challenge with this Vegan Rice Krispie Squares recipe. They are so tasty and chewy and give a little boost of protein, because why not! We dare you to try it and see for yourself :)

Vegan Rice Krispie Squares

I thought I'd have to give up on the Rice Krispies squares since traditional marshmallows are made with gelatin (so it's not even vegetarian). Finally, there are vegan marshmallows on the market, and I guarantee you that the result will be just as delicious. You can check the recipe for the brand of marshmallows I used.

I decided to add a little special touch, a protein icing made with the Vegan Pro with maple and vanilla flavour. Try the recipe, and you won't be disappointed!


Ingredients (9 squares)

1/4 cup Vegetable margarine
2 tbsp Pure Organic Coconut Sugar
1 bag 283g Vegan marshmallows (see notes)
2 tsp Vanilla extract
4 cups Rice Krispies cereal

Frosting
3 tbsp Vegan Pro – Maple Vanilla
3 tbsp Vanilla oat milk
3 tbsp Icing sugar



Method : 
1. Line a 9x9-inch square pan with parchment paper.

2. In a large saucepan, over low heat, melt the margarine and sugar for about 5 minutes. Add marshmallows and vanilla and soften for about 10 minutes, stirring frequently. Add cereal and mix well. Pour the mixture into the mould and press down firmly with the back of a spoon. Leave to refrigerate for 30 minutes.

3. Meanwhile, in a small bowl, combine the ingredients for the frosting.

4. Cut 9 squares and spread with the frosting.
