These vanilla and pecan cookies are soft, chewy, and perfectly crisp on the edges. Made with Vegan Pro Extra Vanilla, they’re easy to prepare and full of rich flavor—perfect for any sweet craving.

Vegan Vanilla & Pecan Cookies

You’re going to LOVE this cookie recipe! It’s my new favorite. Super soft and tender on the inside, with a perfectly crisp exterior.

The new Vegan Pro Extra Vanilla flavor is absolutely divine and gives these cookies an exquisite taste.

Ingredients (13 cookies)

Dry ingredients
- 1 1/4 cups All-purpose flour
- 1 tsp Baking soda
- 1/8 tsp Ground cinnamon
- 1/8 tsp Salt

Wet ingredients
- 1/2 cup Vegan margarine
- 1 serving Vegan Pro – Extra Vanilla
- 1/4 cup Water
- 1/3 cup Brown sugar, packed
- 1/3 cup White sugar
- 2 tsp Vanilla extract

Add-ins
- 1/3 cup Vegan white chocolate chips
- 1/3 cup Pecans, roughly chopped

Method

1- Place a rack in the center of the oven and preheat to 375°F (190°C). Line a baking sheet with parchment paper.

2- In a large bowl, whisk together the Vegan Pro and water. Add the remaining wet ingredients and whisk until smooth and well combined.

3- In a separate bowl, mix the dry ingredients. Gradually add the dry ingredients to the wet mixture and stir with a whisk. Fold in the add-ins gently using a spatula.

4- Form 13 dough balls and place them on the baking sheet. All 13 won’t fit on one sheet, so I recommend baking 6 at a time. Bake for 12 minutes, then let cool slightly before enjoying.
