Viral Vegan PB&J Bites

These viral PB&J bites are the ultimate summer snack: fruity, creamy, and chocolatey!
They’re easy to make, full of flavor, and freezer-friendly for whenever a sweet craving hits. A delicious twist on the classic peanut butter and jelly combo — with a rich chocolate coating. Perfect as a treat, a snack, or a little bite of joy any time of day!

Ingredients
- 2 cups Frozen raspberries
- 2 tablespoons Organic Chia Seeds - RAW Nutritional
- 2 teaspoons Lemon juice
- 1½ tablespoons Maple syrup
- About 7 teaspoons Natural peanut butter
- 130g Dark chocolate (about 1 cup)
- ½ to 1 tablespoon Coconut oil
- Fine sea Salt, for topping (optional)

Method

1- In a saucepan over medium-high heat, add the frozen raspberries, Raw Nutritional chia seeds, lemon juice, and maple syrup. Stir well.

2- Once the mixture begins to heat up, mash the raspberries with a fork to create a purée. Continue cooking for about 4–5 minutes until it reaches a jam-like consistency.

3- On a parchment-lined baking sheet, form 7 small circles with the raspberry mixture.

4- Add a generous teaspoon of natural peanut butter on top of each circle.

5- Freeze for about 1 hour, ideally flipping halfway through, until the bites are completely firm. It’s important that they are fully frozen before dipping, or they will fall apart in the melted chocolate.

6- Melt the dark chocolate with the coconut oil (for better texture), and quickly coat each bite. Sprinkle with a pinch of sea salt if desired for a delicious sweet-salty combo.

7- Freeze again for about 15 minutes until the chocolate is set — and enjoy!
