First, it is important to start by clarifying that there are different types of tofu: extra-firm tofu, firm tofu, smoked tofu, and silken tofu.
The first three will be used mainly for stir-fries, grilled meal, or scrambled tofu. Their textures are firmer, and they are also the ones that we will marinate to add flavor (except for the smoked one which already has its flavor).

So… what to do with silken tofu?
Its texture is not firm enough to grill it without it falling apart, and when it is natural, it tastes nothing.
But, It is possible to use this type of tofu in many ways! You just need to
know how.
Please note that the suggestions below relate to plain silken tofu. There are also some flavors such as caramel or banana. These versions can be eaten very well directly like this, in a smoothie or a dessert.
So here are the different ways we can use silken tofu (plain) in cooking:

As a substitute for mayonnaise
If a sauce or dip recipe calls for mayonnaise, you can surely replace it with silken tofu. You'll have to make it creamier by passing it through the blender or directly make the recipe with the blender.
For example, you could make a vegan ranch sauce or an Asian sauce with silken tofu, soy sauce, sesame oil, and hot sauce.

As a vegan cream
Again, if a recipe calls for cream, you can easily replace it with silken tofu by first passing it through the blender.
For example, switching the cream in a rose sauce by silken tofu is delicious. You won't notice the difference.

In a creamy scrambled tofu
Above, it was mentioned that the best tofu to make scrambled tofu is the extra firm or the firm. It’s still true. However, you may want to make scrambled tofu in the style of a «creamier» omelet. For this, adding a little silken tofu to the recipe is perfect. It brings a different texture to the dish and prevents it from being dry.

In a smoothie
To add a creamy texture to a smoothie, this tofu is ideal. It also adds a little protein. However, keep in mind that silken tofu has less protein than extra-firm tofu. On the other hand, this extra-firm one cannot be put in a smoothie, so the first remains an interesting option.

In a miso soup
Have you ever eaten miso soup in which there was very pale tofu cut into small cubes?
It was most likely silken tofu! If you want to make this soup at home, use silken tofu for best results.

To make a vegan yogurt
It is easy to make a good vegan yogurt in a few minutes with this tofu. It should only be blended with berries, maple syrup, and vanilla extract.
For example, with this formula and taking blueberries as fruit, makes an excellent blueberry yogurt to accompany with granola for breakfast.

To make a pudding or a chocolate mousse
Silken tofu is the ideal ingredient for making pudding or chocolate mousse very easily. You can mix it with melted dark chocolate, a little bit of maple syrup, and the mousse is ready. You could even add protein powder to it! You can then serve it like that or with berries on top.

To make a vegan quiche
A vegan quiche? Yep, and it's excellent.
This is precisely a recipe based on silken tofu that we first pass in a blender with spices and nutritional yeast. Then add grilled vegetables of your choice and put the dish in the
oven. It's that simple. It can be eaten very well with a fork or in a sandwich with vegan mayonnaise.
