The coconut sugar gives these cookies a "burnt-toffee" taste that goes so well with the salted caramel flavor. In fact, if you didn't know, toffee is super similar to caramel, except it's made with brown sugar instead of white sugar. Also, toffee is cooked at a higher temperature and for longer, which give this "burnt" taste and makes it harder when you talked about the candy itself.

Ingredients for 10 cookies:
110gr Medjool Dates (6 medium dates)
10gr Flax Meal (1tbsp) + 3 Tbsp to create a vegan egg
80gr Coconut Sugar (1/2 cup)
50gr Almond Flour
10gr Coconut oil
4Tbsp Water
1/2tsp Baking Soda
1/2tsp Baking Powder
1/3tsp Salt
1/2tsp Vanilla Extract + 1/2tsp Caramel extract
20gr Vegan mini Chocolate Chips
Method:
Preheat oven to 370 Fahrenheit.
Pit the dates and put them in blender or food processor with water (or almond milk)
In a big bowl, make the vegan egg using the flax meal and 3tbsp of water
Transfer the dates in the bowl you used for the "egg", and add all the following ingredient except the chocolate chip.
Mix everything with a spoon/fork
Fold in the chocolate chip
Use 1 big spoon to form the cookie, and place it on a greased pan.
Bake for 11-12 minutes (center of the oven)
