Revisit your classic banana bread recipe in an energy ball version. These small snacks go well during hikes or picnics. They will give you enough energy to get you through your busy days!

Banana Bread Energy Balls

For this month of June, I thought I would offer you a lovely family recipe with known flavors that can easily be brought as a snack for a picnic or lunchboxes in day camps. Filled with good things and simple ingredients you all already have on hand, she will be a hit with the whole family!

Ingredients (About 15 balls)

1 1/2 cup Oatmeal
1/2 cup Walnuts
1 scoop Vegan Pro - Maple Vanilla
1 tbsp Organic Ground Flaxseeds
1 tbsp Organic Chia Seeds
1/2 tsp Ground cinnamon
1 Medium ripe banana
1/4 cup Dates, chopped
1/2 tsp Vanilla extract
1/4 cup Dark chocolate chips
1/4 cup Unsweetened coconut shavings

Method

1. Pour the first 6 ingredients into a food processor and pulse until everything is finely chopped.

2. Rehydrate your dates in 1/4 cup (60 ml) of water for 1 minute in the microwave. Drain, then add them to the food processor with the banana and the vanilla extract.

3. Pulse until the dough comes together, then add the dark chocolate chips. Pulse again a few times to integrate.

4. Form about fifteen balls by moistening your hands (this will prevent the preparation from sticking after your fingers).

5. Pour the coconut into a bowl, then roll your energy balls in it, pressing well.

6. Refrigerate 30 minutes to 1 hour before serving.

Keep in the refrigerator at all times. Freeze very well.
