Carrot Cake Energy Balls

These carrot cake energy balls are the perfect snack when you're craving something sweet while adding a little extra protein to your day. Made with simple ingredients like dates, walnuts, carrots, and our Extra Vanilla Protein, they deliver a soft texture and comforting flavor. Coated in vegan white chocolate, they're an easy-to-make treat that feels just as indulgent as dessert.

Ingredients
- 1 cup Dates, soaked in hot water
- ½ scoop of RAW Nutritional Extra Vanilla Protein

1 tablespoon of RAW Nutritional Chia Seeds

3 tablespoons Creamy almond butter
- ⅓ cup Grated carrots
- ¾ cup Walnuts
- ½ cup Shredded coconut
- ¾ teaspoon Ground cinnamon
- ½ teaspoon Vanilla extract
- ⅛ teaspoon Nutmeg
- Pinch of Sea salt or salt
- 180 g Vegan white chocolate, for coating
- ½ tablespoon Coconut oil* (optional)

Method

1- Soak the dates in hot water for 5–10 minutes if they are dry or firm. Drain well.

2- Add all ingredients (except the vegan white chocolate and coconut oil) to a food processor and pulse until the mixture is finely chopped and sticky. Be careful not to process it into a completely smooth paste.

3- Roll the mixture into balls using about 1½ tablespoons per ball. Use a small ice cream scoop if desired to make them all the same size.

4- Melt the vegan white chocolate with the coconut oil, then coat each energy ball in the chocolate. Garnish with grated carrots before the chocolate sets.

5- Refrigerate for 15–30 minutes, or until the chocolate is fully hardened. Enjoy!

Note
Grate a little extra carrot to decorate the energy balls, if desired.
