Chia Seed and Mango Pudding

Looking for a light breakfast this morning? We have a layered pudding with chia seeds and fresh mango for you... Healthy and natural ingredients that feel good inside, a tasty breakfast in simplicity.

Ingredients (1 serving)

2 tbsp Organic Chia Seeds
2 Ripe bananas
3 Medjool dates, pitted
1 tsp Vegan Pro - Maple Vanilla
1 cup Cold water
1 cup Fresh mango

Topping ideas
1 Medjool date, pitted and chopped
A handful of berries
Fresh mango slices
Banana slices
2 tbsp Unsweetened dried coconut

Method

1. In a Mason jar, glass or bowl, add chia seeds and 1/2 cup of water, mix well (2-3 times) and let sit for 10 minutes or until chia seeds swell/gelatinize.

2. In a blender, add bananas, dates, protein and 1/4 cup of water and reduce until smooth and creamy. Pour over the chia seed mixture and mix. Set aside.

3. In a blender, add fresh mango and 1/4 cup of water and reduce until smooth and creamy. Pour over the chia seed mixture to form 2 layers.

4. Add toppings of your choice on top, if desired, and enjoy.
