Coffee Ice Cream

After the success of my Oreo ice cream, I had no choice but to create more recipes like this! The best refreshment to eat in the summer is definitely a frozen snack.

I am a heavy coffee drinker, and the Vegan Pro – Coffee-Wafers is one of my favorite flavors. So I'll let you guess that the coffee explosion in this ice cream makes me drool just thinking about it!

Ingredients (8 servings)

1 Banana, peeled
1 can (290 ml) Sweetened coconut cream
1 cup Unsweetened plant-based milk
1 cup Brewed coffee, cooled
2 servings Vegan Pro - Coffee Wafers
2 tbsp Ground coffee
1 tbsp Vanilla extract


1. In a blender, mix all the ingredients.

2. In a glass container or metal loaf pan, pour the mixture.

3. Cover and place in the freezer for a minimum of 4 hours.
