Date and Oat Muffin Caps
Here’s a nutritious snack or breakfast idea! Packed with dates, oatmeal, chia seeds and ground flaxseeds, you will get a great amount of fibre and protein at every bite. Enjoy the best part of a muffin right on the spot.
Date and Oat Muffin Caps
Remember the puffy top of a muffin? This is what I wanted to do today with my date and oatmeal muffin caps. I thought about the coming back-to-school year of my children, and I always like to slip a little dessert on hand in their healthy lunch box. Bingo! Nourishing, delicious, chewy, packed with fibre and protein, they loved it!
Ingredients (9 servings)
1 cup Chopped dates
1 cup Hot water
½ cup Vegetable oil
½ cup Granulated sugar
1 cup Plant-based milk
½ tsp Vanilla extract
1 cup Quick-cooking oatmeal
2 tbsp Organic Ground Flaxseeds
1 tbsp Organic Chia Seeds
1 ½ tsp Baking powder
Pinch of salt
1 ½ cup Wheat flour
Method
1. Preheat your oven to 350 °F (180 °C) and line a large baking sheet with parchment paper.
2. Heat 1 cup of water in the microwave for 1 minute 30, then add the chopped dates. Let sit while you make your preparation.
3. Combine vegetable oil, granulated sugar, half the plant-based milk and vanilla extract in a large bowl. Whisk.
4. In a small bowl, mix the dry ingredients together from the oats to the wheat flour. Pour these into the wet ingredients, blend, and add the rest of the plant-based milk and the drained dates.
5. Place the dough with an ice cream scoop on the prepared baking sheet, then bake for 17 minutes. Allow cooling a little before consuming.
