Figs, Blueberries & Chia Seeds No-bake Energy Balls

Preparation: 5 minutes
Refrigeration time: 20 minutes

Ingredients (Servings may vary)
1 1/2 cups Cashews
1 tbsp Organic Chia Seeds
1/2 cup Coconut chips
1/4 cup Blueberry jam
5 Dried figs (we used Smyrna figs from Costco)
5 Medjool dates, pitted
1 tbsp Hot water
1 tbsp Apple cider vinegar
1 tsp Fleur de sel

Method

1. In a food processor, blend together the cashews, chia seeds and coconut chips until a homogeneous mixture is obtained. Pour into a bowl and set aside.

2. Add all other ingredients to the food processor and blend again until a homogeneous mixture is obtained.

3. Using a spatula, combine the wet mixture with the dry preparation. Mix well.

4. Then, refrigerate for 20 minutes to make the dough cold and slightly hardened.

5. Roll the dough into several 1-inch balls using your hands and serve.

Store in the refrigerator in an airtight container or freeze.
