When we think about gingerbread, we often think about thick and not-so-chewy cookies. But what if we could put these flavours that we love in a nice Gingerbread Flavored Chewy Bars recipe? We might have created the perfect snack!

Gingerbread Flavored Chewy Bars

Every Sunday or beginning of the week, I make sure to cook a good sustaining snack for my busy weeks. These granola bars are absolutely tasty, quick to make and nutritious!

Since it's the holiday season, I wanted to add a little touch of festivity with the spices that remind us of the taste of gingerbread cookies. The whole family will love it!


Ingredients (8 bars)

1 1/4 cups Quick cooking rolled oats
1 cup Puffed rice
1 cup Almonds, coarsely chopped
1/2 tsp Ground cinnamon
1 tsp Ground ginger
1/4 tsp Ground nutmeg
1/8 tsp Cloves
Pinch of salt
1/2 cup Brown rice syrup
2 tbsp Vegan margarine
1 tsp Vanilla extract
1 Half banana, mashed


Method : 

1. Line a 20 X 20 cm (8 X 8 in) square pan with parchment paper.

2. In a bowl, combine the rolled oats, rice, almonds, chia, camu camu, spices and salt.

3. In a small saucepan over medium heat, bring the rice syrup, margarine and vanilla to boil. Reduce heat to low and whisk constantly for 2 minutes. Pour the mixture over the oat mixture and mix.

4. Spread the mixture into the mold and press down firmly with the back of a spoon. Refrigerate for at least 2 hours before unmolding and cutting into 8 bars.
