Lemon Poppy Seed Baked Oats

These lemon poppy seed baked oats are a nourishing yet indulgent breakfast option. Their soft texture and bright citrus flavor make them both refreshing and comforting. With added protein, they are satisfying and perfect to start your day strong. An easy, quick recipe that’s great for meal prep.

Ingredients

Pour le gruau au four
- 2 cups Quick oats
- 1 tsp aking powder
- 1½ to 2 Scoops
- 1⅓ cup Plant-based milk
- 1 tbsp Lemon juice
- Zest of 1 Lemon, divided in half
- 3½ tbsp Cane sugar
- ½ tsp Vanilla extract
- 1 ripe Banana
- 1½ tbsp Ground Flaxseeds
- 1 tbsp Poppy seeds

For the lemon yogurt glaze
- 2 tbsp Plain plant-based yogurt
- ¾ cup Powdered sugar
- 1½ tbsp Lemon juice
- Poppy seeds, for topping

Method

1- Place all ingredients except the poppy seeds into a blender or food processor and blend until smooth.

2- Stir in the poppy seeds by hand.

3- Preheat the oven to 350°F (175°C).

4- Pour the mixture into 4 greased ramekins and bake for 25–30 minutes.

5- Meanwhile, prepare the glaze by mixing the yogurt, powdered sugar, lemon juice, and the remaining lemon zest.

6- Remove the baked oats from the oven and let them cool slightly before adding the glaze. Finish with a sprinkle of poppy seeds and enjoy!
