Matcha & Raspberry Chia Pudding

A perfect balance of freshness and sweetness, this matcha and raspberry chia pudding is as beautiful as it is delicious. Rich in fiber and naturally sweetened, it makes a nourishing breakfast or snack. The matcha adds an energizing boost, while the raspberry coulis brings a vibrant fruity touch. Easy to prepare, it’s the perfect make-ahead recipe.

Ingredients

For the matcha chia pudding
- 3 tablespoons Raw Nutritional Chia Seeds
- 398 ml Coconut milk
- 1½–2 teaspoons Raw Nutritional Pure Organic Matcha Tea
- 2 tablespoons Maple syrup

For the raspberry coulis
- 1 bag Frozen raspberries
- 1½ tablespoons Raw Nutritional Chia Seeds
- 2 teaspoons Lemon juice
- 3 tablespoons Maple syrup

Toppings
- A few fresh Raspberries
- Coconut flakes

Instructions

1- Mix all the ingredients for the chia pudding in an airtight container. Refrigerate for about 4 hours or overnight.

2- Meanwhile, prepare the raspberry coulis. In a saucepan over medium-high heat, add the frozen raspberries, Raw Nutritional chia seeds, lemon juice, and maple syrup. Mix well.

3- Once the mixture starts to heat up, mash the raspberries with a fork until it becomes a purée. Continue cooking for about 4–5 minutes until it reaches a jam-like consistency. Set aside and let cool slightly.

4- Spoon the chia pudding into a container, then add the raspberry coulis on top. Garnish with fresh raspberries and coconut flakes if desired.
