End your carrot cake cravings with these bars! You don't even need to bake them: pop them in your fridge and get these tasty squares in six simple steps. Pour the icing on top and enjoy!

No-Bake Carrot Cake Bars

How to resist anything called "carrot cake"?

And, if I add as a bonus that these are no-bake, made from good, healthy and nourishing ingredients with a bit of icing that will not leave anyone indifferent, and that it is great for a picnic or as a snack and, on top of all this they are sure to please the whole family, we certainly have a winner without hesitation!

Ingredients (About 16 bars)

1 1/2 cup Oatmeal
1/2 cup Sunflower seeds (unsalted, not roasted)
1/2 cup Unsweetened coconut
1 scoop Vegan Pro - Maple Vanilla
1 tbsp Organic Chia Seeds
1 tbsp Flaxseeds
1/2 tsp Ground cinnamon
1/4 tsp Ground nutmeg
1 Medium carrot, grated
1 cup Chopped dates
3 tbsp Maple syrup

Icing

2/3 cup Sunflower seeds (unsalted, not roasted)
1/2 cup Chopped dates
2 tbsp Coconut oil, melted
2 tbsp Maple syrup
1/2 tsp Vanilla extract
1/4 cup Soy cream

Method

1. For the icing: Start by pouring your sunflower seeds into a small saucepan. Cover with water and bring to a boil over medium-high heat. Allow 15 minutes and drain.

2. For the bars: Pour in the food processor the oatmeal, sunflower seeds, coconut, Maple Vanilla Vegan Pro, chia and flax seeds, and spices. Pulse until everything is finely chopped.

3. Cover your dates with 1 cup (250 ml) of water and send to the microwave for 1 minute 20. Drain, then pour into the food processor with the grated carrot and maple syrup. Pulse until everything comes together and a ball forms.

4. Spread the preparation in an 8x8 inch (20x20 cm) pan covered with parchment paper, then continue the icing.

5. Cover your dates with 1/2 cup (125 ml) of water and send to the microwave for 1 minute 20. Drain, then pour into the mixture with the rest of the ingredients (and the sunflower seeds drain too). Cook until you obtain a smooth icing, taking care to scrape the sides as needed.

6. Next, pour it over the carrot cake bars, spreading well over the entire surface. Refrigerate 1 to 2 hours before cutting into squares and enjoy.

Keep in the refrigerator. Freezes very well.

    J’ai acheter un de vos produit vegan pro gaufrette , que j’ai du commander sur Amazon , car je demeure dans la ville de Québec et il n’y à pas aucun distributeur ici , je suis aller au Marcher Avril , et il y en na pas .
    Je trouve ça dommage .
    Je peut vous dire que le produit est pas granules en bouche je l’adore , je prenais le Vega protein et il laisse un goût granuleux dans la bouche .
    Déçu de ne pas avoir un distributeur dans ma ville de Québec . Mais j’adore votre produit.
