Oil-Free Homemade Lemon Chia Seed Bread

Preparation: 20 minutes
Cooking time: 50-60 minutes
Cooling time: 15 minutes
Ingredients (10-12 servings)
1/3 cup Unsweetened applesauce
3/4 cup Plant-based milk of choice (we used almond milk)
Zest of 2 lemons (2 tbsp)
Juice of 2 freshly squeezed lemons (8 tbsp)
1/2 cup Maple syrup
1 tsp Vanilla extract
Pinch of salt
2 cups Unbleached all-purpose flour
2 tsp Baking powder
1/2 tsp Baking soda
3 tbsp Organic Chia Seeds
Method
1. Preheat the oven to 350°F.
2. In a medium bowl, combine all the ingredients except the flour, baking powder, baking soda and chia seeds.
3. Add the flour, baking powder and baking soda and mix. Then add the chia seeds and mix again.
4. Transfer the mixture to a loaf pan previously covered with parchment paper.
5. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Let cool 15 minutes before unmolding, then let cool completely before slicing and serving. Eat hot (toasted), warm (microwave oven) or cold.
