Pistachio & Matcha Overnight Oats

Looking for a new breakfast idea that’s nutritious, delicious, and super easy to prep? These pistachio & matcha overnight oats are just what you need! They combine the sweetness of maple syrup, the richness of pistachio butter, and a hint of matcha for the perfect flavor combo. Plus, they’re protein-packed and made ahead for a stress-free morning.

Ingredients

For the pistachio & matcha overnight oats:
- 1½ cups large Rolled oats
- 1¾ cups Unsweetened plant-based milk
- 1 tbsp Maple syrup
- 1½ tbsp Pistachio butter
- 1 scoop (or about ⅓ cup) Vegan Pro Maple-Vanilla protein powder
- 1 tsp Pure Organic Matcha Tea

For topping:
- 1¼ cups Vanilla plant-based protein yogurt
- A few crushed Pistachios
- Fresh fruits like kiwi, banana, or raspberries
- Extra pistachio butter

Method

1- Add all the overnight oat ingredients into an airtight container and mix well.

2- Refrigerate overnight or for at least 30 minutes.

3- Serve in small jars or bowls (optional) starting with a layer of fresh fruits like kiwi, then the pistachio oats, and top with vanilla yogurt.

4- Garnish with crushed pistachios and extra pistachio butter to taste.

Note: For a more pronounced matcha flavor, feel free to add a bit more matcha. The amount listed in the recipe provides a subtle matcha taste without being overpowering!
