Salty Cake with Green olives, Spinach & Chia Seeds

A starter, a breakfast, a snack… Our salty cake is perfect for all occasions and can be shared wonderfully! The mixture of green olives stuffed with garlic, fresh spinach and chia seeds will delight your taste buds, especially if you are craving salt!

Preparation: 10 minutes
Cooking time: 50 minutes

Ingredients (About 6 slices)
2 cups Flour (we used white rice flour)
1 pouch Fleischmann's active dry yeast for traditional baking
1 cup Oat milk
1/4 cup Avocado oil
2 tsp Organic Chia Seeds
2 tsp Herbes de Provence
1 tsp Fleur de sel
Pepper, to taste

Garnish
100g Pitted green olives (we used the ones stuffed with garlic), sliced
100g Fresh spinach, roughly chopped

Method

1. Preheat the oven to 350°F. Line an 8x8 square pan or a bread pan with aluminum foil. Set aside.

2. In a medium bowl, mix all the ingredients well, except the garnishes, until the dough is homogeneous.

3. Add the garnishes and mix gently to spread them well.

4. Pour and shape the mixture into the pan according to the desired final shape (it will remain as it is during cooking). Brush the top with avocado oil and bake for about 50 minutes.

5. Broil for 1-2 minutes to brown the top, cut and serve.
