Snickerdoodle Cookies (Crispy & Tender)

Snickerdoodle cookies! What are they?

Originally, this cookie was made with butter (or oil), flour, sugar and cinnamon! This vegan version is absolutely delicious and has a little vanilla touch because of the addition of Vegan Pro.

These sweets, crispy on the outside and perfectly tender on the inside, are perfect for the holiday season. Their cinnamon taste makes you want to eat them with a delicious hot chocolate or ginger tea!

Ingredients (17 cookies)

1 cup Unbleached all-purpose flour
⅓ cup Cane sugar
2 tbsp Vegan Pro - Maple Vanilla
1 tsp Ground cinnamon
1 tsp Baking soda
½ tsp Baking powder
Pinch of salt
⅓ cup Vegetable margarine*
¼ cup Unsweetened applesauce
1 tsp Vanilla extract

Coating
1 tbsp Cane sugar
1 tsp Ground cinnamon

*Should be at room temperature.


Method
  1. Preheat the oven to 375 °F and line a baking sheet with parchment paper.
  2. In a bowl, combine the flour, cane sugar, Vegan Pro, cinnamon, baking soda, baking powder and salt.
  3. In a large bowl, combine the margarine, applesauce and vanilla extract.
  4. Gradually incorporate the dry ingredients into the liquid preparation, mixing with a spatula.
  5. For coating, combine cane sugar and cinnamon on a plate.
  6. With the dough, form 17 balls with a tablespoon and roll each ball in the cinnamon sugar. Then, put them on the baking sheet and cook in the oven for 8 to 10 minutes.
  7. Let cool and enjoy!
