It's my mom's birthday, and I wanted to make her some festive cookies! So I decided to go with a classic confetti cookie recipe. They have a neutral flavor that everyone loves, and they're a nice gift.
For the confetti, have fun choosing the ones you like. There are so many different shapes and colors!
Ingredients (10 cookies)
1 tbsp Organic Ground Flax Seeds
2 tbsp Water
1 1/4 cups All-purpose flour
1 tsp Baking soda
1/2 tsp Baking powder
1/8 tsp Salt
1/2 cup Vegetable margarine
1/4 cup White sugar
1/4 cup Packed brown sugar
1 1/2 tsp Vanilla extract
1 cup Confetti candy

Method
1- In a small bowl, combine the flax seeds and water. Set aside.
2- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
3- In a bowl, combine the flour, baking soda, baking powder, and salt. Set aside.
4- In a large bowl, using a whisk, combine the flax seeds, margarine, brown sugar, sugar, and
vanilla extract. Add the dry ingredients and mix. Refrigerate for 1 hour.
5- Form 10 balls, roll them in the confetti, and place them on the baking sheet. All 10 balls will
not fit on a single baking sheet; I recommend starting with 5 balls. Bake for 15 minutes and let
cool before serving.
