"Strawberry Shortcake" Parfait

Summer is almost at our doors. Refresh yourself with these amazing parfaits. The mix of vanilla and maple yogurt and fresh ripe strawberries will delight your tastebuds!

"Strawberry Shortcake" Parfait

Everything you love about a strawberry shortcake is in these little breakfast parfaits. Seriously one of the best things I have eaten recently. A treat ready in minutes that you won't want to miss! Imagine with the coming seasonal strawberries, the dream!

Ingredients (2 verrines)
1/2 cup Plant-based yogurt, plain
1/2 cup Coconut milk
3 tbsp Vegan Pro - Maple Vanilla
2 tbsp Maple syrup
1 tsp Pure Organic Camu Camu

Strawberry and chia jam
2 cups Frozen strawberries
3 tbsp Organic Chia Seeds
3 tbsp Maple syrup

For garnish
6 Strawberries, cut in half
Homemade granola (try my recipe)

Method

1. For the strawberry and chia jam: Pour the 3 ingredients into a medium saucepan. Light your heat to medium-high.

2. When the boiling point is reached, reduce the heat to medium. Continue cooking, mashing the strawberries with a masher (for potatoes) or with the back of a fork.

3. When the jam has thickened, let cool off the heat.

4. For the verrines: Mix the first 5 ingredients vigorously with a whisk, from plant-based yogurt to Camu Camu powder.

5. Place 2 verrines (or serving glasses) on the counter and add a few tablespoons of vanilla and maple yogurt mix to the bottom of each glass.

6. Add half the strawberry and chia jam. Garnish the rim of the glass with half the strawberries, then pour the rest of the vanilla and maple yogurt on top.

7. Finally, garnish with my homemade granola recipe and berries.

8. Refrigerate 1 hour before serving or overnight. Enjoy!
