Trail Mix Crunchy Bites
These flavorful crunchy bites are easy to carry on a hike. They will give you the energy you need at any moment!

Freezing time: 30-60 minutes
Ingredients (Servings may vary)
1 can (540 ml) Chickpeas, rinsed, drained and dried with a clean cloth
1/2 cup Raw cashews
1 1/4 cups (200g) Vegan dark chocolate chips
1 tbsp Vegan Pro - Chocolate
1/2 cup Organic Chia Seeds
1/4 cup Thompson raisins
1/2 cup Pumpkin seeds
1/2 cup Pine nuts
Method
1. Preheat the oven to 350 °F. Transfer the chickpeas to a baking sheet lined with parchment paper and roast for 35 minutes or until crispy.
2. Ten minutes from the end, add the cashews and continue cooking.
3. Place the chocolate chips in a bowl, then add the chickpeas and cashews while still hot.
4. Add remaining ingredients and stir until the mixture is evenly coated with chocolate.
5. On a baking sheet lined with parchment paper, form small bite-size pieces by placing 1-2 tbsp at a time.
6. Let cool for a few minutes before putting the baking sheet in the freezer. Allow time for the bites to solidify (about 30-60 minutes).
