Pumpkin Energy Balls

Fall is, unfortunately, already coming to an end (sniff!)... I'm sure many of you enjoyed the fall season and cooked delicious pumpkin-based recipes! If you're like me, you must indeed have a lot of pumpkin puree left in your refrigerator. Don't panic! Here is the perfect recipe for not wasting any of it!

It's always convenient to have energy balls in your fridge. This snack is perfect when the munchies start to tickle your tummy or to eat after a workout! For this recipe, I really got inspired by the fall flavors. Eating those energy balls is a bit like drinking a pumpkin spice latte! What more could you ask for?

In addition to being quick and easy to make, this recipe requires no baking!

Ingredients (14 balls)

2 cups Oats
1/2 cup Canned pumpkin puree
1 tbsp Chia seeds or Ground flaxseeds
2 tsp Pumpkin spice
1/4 cup Sunflower seeds
½ scoop Vegan Pro – Maple Vanilla
2 tsp Vanilla extract
1/8 tsp Salt
2 tbsp Maple syrup
1 tbsp Water

Method

1. In a food processor, add all the ingredients. Blend until a loose dough forms.

2. Portion the dough into 14 balls.

3. Enjoy!

*Keep in the refrigerator or freezer.
